The cellarman is to the surgeon how the making of wine is to medicine. He is the person who handles the wine in its earliest moments, right after the pressing at the end of the harvest; he looks after it during its maturation until the bottling, and he keeps it while it is refining in the bottle. What's your job at Panizzi?
I am the cellar manager: I am responsible for the wine cellar.
What is the skill that those who do your job cannot absolutely lack?
Experience and attention to detail, both very important. The work is not so hard, but even a small distraction can compromise the final result. Here I am making wine: keeping the tanks full, so that not so much air gets to the wine, is a simple precaution that, if not applied, can compromise the quality of a whole harvest, and you really cannot afford it.
What is your favorite element in your work?
It's a specific moment of the working year, rather than an element: the harvest. It is a chaotic, tiring and stressful, but it really is the decisive moment, one to step up your game. And above all it is liberating: putting your hands in the bunches, in the must, being completely soaked and dirty at the end of the day, feeling the satisfaction of a job well done is wonderful. And you go back to being a little child too. The harvest has changed a lot over the years, now it is not as it used to be and the logic of productivity must prevail. Before it was a real party, a convivial moment that was expected all year.
What did you do before working at Panizzi?
I worked as a cellarman but also as a factor for a small farm. There I learned the basics to do the job I do today.
What do you do in your free time? What are your passions?
I take care of my little kids; they take up all the free time I have!
What is your favorite Panizzi wine?
My favorite wine is the Vernaccia base, green label. It is a very drinkable wine, which is easy to drink and easily combined with everything, suitable to be drunk throughout a whole meal.
What is your favorite place at Panizzi?
Like others before me have said, my favorite place is at the top of the hill of Santa Margherita, where the pine is, a landmark of the company. The landscape is superb, the towers, the vineyards ...
What is your favorite place in San Gimignano?
The fortress, La Rocca. It is a place linked to my adolescence, a place where one could stay in peace and isolated, in complete freedom. There is no one born in San Gimignano that did not go "in Rocca", as they say here, to spend time, hang out with friends, maybe flirt. When I think about the fortress I take a trip back in time.
